## Silver Medallist – TCVA Awards 2026 ## – Pale straw and softly clouded, this Col Fondo style sparkling wine shows green apple and lemon zest layered with gentle bread and almond notes from its lees. Dry and precise, with bright citrus tension and a clean savoury edge, it carries fine weight while remaining fresh and focused.
Made in the traditional Col Fondo style, meaning “with the bottom”, Bubbling Blanc 2024 is a naturally sparkling blend of Pinot Blanc and Seyval Blanc grown on the chalky slopes of JoJo’s Vineyard in the Chiltern Hills. Wild fermented in oak and steel, it finishes its journey in bottle with the lees intact, giving subtle texture and savoury depth.
Lightly cloudy and gently effervescent, the wine opens with green apple, lemon zest and a hint of white blossom, underpinned by soft bread and almond notes. The palate is dry and precise, driven by bright acidity yet balanced by a fine, almost creamy weight. Lees character is present but measured, adding complexity without heaviness.
Pair with: A composed, food friendly sparkling wine, well suited to oysters, soft cheeses and simple seafood. Serve well chilled, swirl before opening (or don’t) to shape your own adventure.
