Pale straw and softly clouded, this naturally sparkling wine hums with energy. Green apple, lemon zest, and a hint of almond meet a savoury edge from its lees – lively, bright, and quietly complex.
Made in the traditional Col Fondo style – Italian for “with the bottom” – Bubbling Blanc 2024 captures the essence of English freshness with a playful, unfiltered twist. A blend of Pinot Blanc and Seyval Blanc, grown on the chalky slopes of JoJo’s Vineyard in the Chiltern Hills, it was wild-fermented in oak and steel before finishing its journey in bottle, lees intact.
The result is lightly cloudy and naturally sparkling, a wine that celebrates its origins and idiosyncrasies alike. Aromas of crisp green apple, lemon zest, and white blossom rise through a delicate haze, while the palate balances taut acidity with gentle creaminess and a whisper of savoury depth from the lees.
